The tiger's eye sunflower has a very distinct dark center, and yellow petals.

The sunshine sunflower is one of the 10 varieties I grew this year. I ordered a whole variety package from SeedsofChange.com, and all but the mexican variety came up strong.

This type of amaranth was used by the Hopi Indian tribe as a red dye. I feel they provide a nice contrast to all of the greens in my garden.
